The native inhabitants of this region already had a large variety of dishes, and with the arrival of the missionaries who introduced the cultivation of wheat, corn, olives and vine, and coexistence between the them allowed the emergence of new native food combinations and new dishes. But sadly, these creations were not able to continue developing as the Jesuits were expelled for failing to follow church and the king's doctrine, so many of the Indian towns disappeared together with their gastronomic creativity.
This is the reason why the local cuisine's diversity is not as extense as you would be able to find in other parts of Mexico, however due to the natural bounty available in the Sea of Cortez and the Pacific Ocean, locals have tried to generate a new variety of dishes as tasty as what you can find in the rest of Mexico.
Some of the delights you can find in Cabo San Lucas and Los Cabos in general are Chocolata clams (Almejas Chocolatas), this exquisite shellfish is cooked in a stone bed covered by a regional herb called romerito. When the herb has been consumed it is time to enjoy the clams, because they are ready!
The world famous fish tacos that are not only popular in this region, but in many other places in Mexico, many fo whome have tried to imitate the local style due to its delicious flavor. Also smoked marlin is another dish that has been imitated in many other parts of the country, although in each region gives it its own special touch that makes it different all over Mexico.
Other food delicacies from Los Cabos, are the variety of dishes prepared with fresh seafood such as shrimp, lobster, abalone, stingray, crab, squid, delicious fish species and more. They are also mixed with other local ingredients from the area such as romerito, chile, garlic, onion, salt and pepper.

One of the delights that everyone likes are chicken tamales fajados (tamales fajados de pollo), tamales de Guemes also prepared with chicken or pork, olive oil, raisins and olives.
Another very traditional dish that we must mentions is "Food for the Poor" (Comida de pobres), this funny name is a dish prepared with seafood soup, Mexican rice and beans accompanied with corn flour tortillas.
Usually the dishes in Cabo San Lucas are served with Clamato (tomato and clam drink) or Damiana liqueur, prepared with a plant bearing the same name, cane alcohol, water and sugar. This drink is made by the Guaycura Indians to celebrate their ceremonies. You'll feel relaxed plus it is said to be an aphrodisiac and is also an excellent digestive drink.
